The composting of organic residues and subsequent incorporation of the composts in the soil is one of the most efficient processes in the improvement of soil characteristics in organic production. To evaluate the effect of the composition of different vegetable residues in the evolution of the physico-chemical characteristics and gaseous emissions during the process, we conducted the composting of Brassicas, chestnut and jatropha wastes. These were added with grass and straw in 15 composters with capacity of 135L. Each of the 5 compost mixtures (control, broccoli, Portuguese cabbage, chestnut and jatropha) was repeated in three composters. We performed the evaluation of the principal physico-chemical parameters (temperature, dry matter content, pH, electrical conductivity, C/N ratio and the emissions of C-CO2, N-N2O and C-CH4), as well of nutrients and phytochemicals contents. The high temperatures reached in the first two days of the trial were related to the rapid degradation of labile organic matter. Taking into account the low initial C/N ratio, we suggest care in the addition of N-rich materials, such as green grass. The highest emissions of C-CO2 were registered during the thermophilic phase, showing a proportional relation with the temperature peaks obtained. However, in a lesser extent, these emissions occurred during all process. The emission of C-CH4 only occurred in the first two days of composting while the emissions of N-N2O were registered in the beginning of composting and in the maturation phase. At the end of the experiment the decomposing of the organic matter was not yet fully degraded, since emissions of C-CO2 and N-N2O were still registered. Regarding the glucosinolates these were not found soon after the start of the experiment, while the total phenolic compounds tended to increase and the tannins tended to decrease along the composting process. This study suggest that the residues of brassica, chestnut and jatropha can be used as composted materials to incorporate in the soil, nevertheless careful must be taken in combining these with other materials, in order to produce a stable final product rich in humic compounds. Concerning the use of brassica composted rich in glucosinolates, it is concluded that the glucosinolates may not be resistant to the decomposition, therefore the compost cannot be considered for controlling soil phytopathogenic.
