Abstract: As frutas minimamente processadas (MP) têm um elevado potencial de procura, devido à tendência actual dos consumidores para produtos frescos e prontos para serem consumidos. Contudo, são produtos muito perecíveis que devido ao escurecimento que sofrem, são rapidamente rejeitados pelo consumidor. A aplicação de revestimentos comestíveis em frutas MP constitui uma tecnologia emergente com potencial de prolongar o seu tempo de vida útil, bem como de manter os padrões de qualidade exigidos pelos consumidores. O principal objectivo deste trabalho foi avaliar o efeito de um revestimento comestível, constituído por alginato de sódio contendo ácido ascórbico como agente antioxidante e glicerol como plastificante, na qualidade de fatias de pêra 'Rocha' durante o armazenamento refrigerado. Realizaram-se dois ensaios em que as pêras “Rocha” fatiadas foram imersas no revestimento com concentrações diferentes em alginato (0,50% e 1,00% m/v) e ácido ascórbico (0,50%, 1,00%, 1,25%, 1,5%, 1,75% e 2,00% m/v) e condicionadas em caixas plásticas com atmosfera normal e armazenadas a 5 ºC para determinar qual a melhor composição do revestimento, em termos dos indicadores de qualidade cor e textura da pêra “Rocha”. Durante o tempo de armazenamento, houve mudanças significativas na cor e firmeza provocadas por todos os tratamentos, confirmando assim o interesse destes atributos como indicadores da qualidade. Verificou-se que o revestimento com 1% de alginato de sódio e 1,75% de ácido ascórbico melhor manteve os parâmetros iniciais de cor e firmeza da pêra fatiada. Por fim realizou-se o último ensaio para validar a escolha de revestimento anterior, alargando, para isso, os indicadores de qualidade avaliados. Neste ensaio foi determinada a cor e a firmeza, bem como efectuada uma análise sensorial e uma análise microbiológica ao produto durante um período de 11 dias de armazenamento refrigerado. A análise sensorial consistiu num teste de aceitabilidade à aparência global para avaliar o tempo de vida do produto e numa análise descritiva quantitativa aos parâmetros escurecimento, cheiro estranho, sabor estranho e firmeza como descritores. Os resultados do painel relativamente ao escurecimento e à firmeza foram de acordo com os resultados instrumentais da cor e da firmeza, e não foram detectados odores estranhos nos revestimentos testados. No dia 0 foi detectado um sabor estranho, mas com pouca intensidade, na amostra revestida com maior concentração em AA; nos dias seguintes já não foi sentida qualquer diferença para o controlo. No que diz respeito à análise microbiológica, a contagem de microrganismos a 30 ºC, bolores e leveduras e Escherichia coli, revelou resultados inferiores aos limites legais. O revestimento em alginato de sódio (1,00%) e glicerol (5,25%) com incorporação de ácido ascórbico (1,75%) como agente antioxidante demonstrou ser o mais benéfico na manutenção da qualidade da pêra “Rocha” fatiada (menor escurecimento, menor variação total de cor e menor perda de firmeza) aumentando o tempo de vida de 6 (imersão em água) para 9 dias a 5 ºC.
Minimally processed fruits (MP) have a high potential demand because of the current consumer trend for fresh products which are ready to be consumed. However, they are very perishable products of browning, and they are quickly discarded by consumers. Application of edible coatings on fresh-cut fruits constitutes a potential aid in extending their shelf-life, as well as maintaining the high quality standards demanded by consumers. The main objective of this research was to evaluate the effect of alginate coatings with different concentrations containing ascorbic acid as an antioxidant agent and glycerol as plasticizer. The quality of „Rocha‟ pear slices was verified during storage. There were two trials in which the "Rocha" pears sliced were dipping in the edible coating with different concentrations of alginate (0,50% and 1,00% w/v) and ascorbic acid (0,50%, 1%, 1,25%, 1,50%, 1,75% and 2,00% w/v) and conditioned in plastic boxes with a normal atmosphere and stored at 5 ° C to determine the best coating composition in terms of indicators of quality color and texture of “Rocha” pear. During the storage period there were significant changes in color and firmness caused by all treatments, confirming the importance of these attributes as indicators of quality. It was found that the coating with 1% sodium alginate and 1.75% ascorbic acid better maintained the initial quality parameters of color and firmness of the pear slices. The final test took place in order to validate the choice of a previous edible coating which expanded the quality indicators evaluated. In this last test Color and firmness were determined as well as an evaluation of sensory analysis and microbiological analysis to the product during a period of 11 days in refrigerated storage. The sensory analysis included an acceptability test to evaluate global appearance of shelf-life on the product and a quantitative descriptive analysis (QDA) for colour, off-odour, taste and firmness as descriptors. The panels‟ results for browning and firmness were also consistent with the results of instrumental color and firmness and off-odors were not detected in the coatings tested. Day 0 detected a strange taste, but with little intensity in the sample coated with a higher concentration of AA. During the following days there were no differences in the control. With regards to the microbiological analysis, the microorganisms counted at 30 ° C, yeasts, molds and Escherichia coli individually showed results below the legal minimum. The coating in sodium alginate (1,00%) and glycerol (5,25%) with addition of ascorbic acid (1,75%) as antioxidant show to be most beneficial in maintaining the quality of "Rocha" pear sliced (less darkening , the lower the total variation in color and reduced loss of firmness) increased the life span of 6 (immersion in water) to 9 days at 5 º C.
