Title: Adaptação da stevia rebaudiana Bertoni em modo de produção biológica em Ponte de Lima

Abstract: O atual interesse da cultura da stevia baseia-se num mercado emergente de produtos adoçantes relacionado com o número crescente de diabéticos e obesos por todo mundo. Em 2008, o Comité Misto de Peritos em Aditivos Alimentares (FAO/OMS) estabeleceu que os glicosídeos de esteviol são seguros para o consumo humano. A produção biológica assume um interesse crescente da necessidade de uma alimentação com menores impactos ambientais, livre de produtos químicos de síntese e de transgénicos. Aliando estes dois fatores ao facto de haver em Portugal a pertinência da criação de empresas geradoras de postos de trabalho e não havendo a tradição do cultivo de stevia, que é uma planta subtropical, torna-se necessário estudar o potencial de adaptação desta planta, visando a sua produção para o mercado nacional e internacional. O presente trabalho teve como principal objetivo o estudo da adaptação da produção biológica de stevia, no concelho de Ponte de Lima e, de modo mais geral, às condições edafo-climáticas da região Noroeste de Portugal. A cultura de Stevia rebaudiana Bertoni, cultivar Criolla, foi instalada na empresa Biodiversus em estufa e ao ar livre, em solos argilosos de textura medianamente pesada. Avaliou-se também o comportamento das plantas sujeitas a três colheitas para consumo em fresco (F) e a uma única colheita destinada à secagem das folhas (S). O desenho experimental utilizado foi o de split-plot com 4 tratamentos e 3 repetições. Os grandes talhões incluíram os seguintes 4 tratamentos: 2 sistemas de produção (E: estufa e A: ar livre) e 2 tipos de colheita (F e S). Os pequenos talhões corresponderam a 2 tipos de fertilização (f1: fertilização orgânica de fundo e f2: fertilização de fundo e de cobertura 97 dias após a plantação, DAP). O número de hastes por planta, o peso fresco e seco das hastes cortadas foram avaliados 44, 92, 112 e 127 DAP nas plantas destinadas a colheitas para consumo em fresco e 44 e 127 DAP nas plantas destinadas a secagem. Determinou-se ainda a matéria seca. A altura das plantas de stevia, que na plantação era de aproximadamente 10 cm, foi monitorizada nas mesmas datas e ainda 71 DAP. Os efeitos da fertilização não causaram diferenças significativas entre os tratamentos, em nenhum dos parâmetros analisados no âmbito do crescimento das plantas (44 a 127 DAP), o que se poderá explicar pela aplicação tardia da fertilização de cobertura 97 DAP. A altura média do conjunto das plantas na estufa (52,1 cm planta-1) foi superior à altura média do conjunto das plantas produzidas ao ar livre (47,4 cm planta-1) o que se poderá explicar pelo maior valor da temperatura do ar dentro da estufa. Este efeito poderá também estar relacionado com o maior número de hastes nas plantas ao ar livre em 44 DAP (8,6 hastes planta-1), em comparação com as plantas produzidas em estufa (5,8 hastes planta-1). No entanto, o número médio de hastes por planta foi idêntico para todos tratamentos das plantas produzidas em estufa e ao ar livre (média 7,3 hastes planta-1). Apesar da altura média das plantas produzidas na estufa ter sido superior à das plantas produzidas ao ar livre, não foi significativa a diferença entre o peso médio fresco (776,1 g planta-1) e seco das plantas na estufa e o peso fresco (597,0 g planta-1) e seco das plantas produzidas ao ar livre. As plantas para consumo em fresco também apresentaram uma altura média superior em comparação com as plantas destinadas à secagem, mas o peso fresco e seco total médio foi idêntico. A matéria seca média das hastes cortadas foi significativamente superior nas plantas produzidas ao ar livre (20,5%) em comparação com as plantas produzidas na estufa (18,8%), mas o teor médio em ácido ascórbico foi idêntico (em média 9,2 mg g-1 MS). Para o tipo de colheita a matéria seca média das folhas das plantas para consumo em fresco (20,2%) foi superior e o teor médio de ácido ascórbico foi inferior (8,5 mg g-1 MS), em comparação com as plantas para secagem (19,1% e10,0 mg g-1 MS).
The current interest of stevia production is based on an emerging market for sweeteners related products with the increasing number of diabetic and obese worldwide. In 2008, the Expert Joint Committee of Food Additives (FAO/WHO) established that steviol glycosides are safe for human consumption. Organic production is growing interest because of the need to produce food with less environmental impact, free of synthetic chemicals and transgenic plants. Combining these two factors and the fact that there in Portugal the relevance of creating companies that generate jobs and that there is no tradition of stevia cultivation, which is a subtropical plant, it is necessary to study the potential for adaptation of this plant in order to produce it for the domestic and international markets. This work aimed to study the adaptation of the organic production of stevia in Ponte de Lima and, more generally, to the soil and climatic conditions of the North West region of Portugal. The Stevia rebaudiana Bertoni cv. Criolla crop, was installed in Biodiversus farm in greenhouse and outdoors, in heavy clay soils of medium texture. It also assessed the behaviour of the plants subjected to three harvests for fresh consumption (F) and a single harvest for leaves drying (S). The experimental design used was a split-plot with four treatments and three repetitions. The large plots included the following four treatments: production systems 2 (E: Greenhouse and A: outdoors) and the 2 types of harvests (F and S). Small plots corresponded to two types of fertilization (f1: organic fertilization before planting and f2: organic fertilization before planting and at 97 days after planting, DAP). The number of stems per plant, fresh and dry weight of the harvested stems were evaluated 44, 92, 112 and 127 DAP for plants harvested for fresh consumption and 44 and 127 DAP for plants aiming drying of the leaves. It has been also determined the dry matter and the contents of leaves on steviol glycosides. The height of the stevia plant, which was approximately 10 cm at planting, was monitored in the same dates as above and also at 71 DAP. The effects of fertilization did not cause significant differences between treatments in any of the parameters analyzed in the context of plant growth (44-127 DAP), which could be explained by the late application of topdressing 97 DAP. The average height of all the plants in the greenhouse (52.1 cm plant-1) was higher than the average height of all the outdoor plants (47.4 cm plant-1) what can be explained by the higher air temperature in the greenhouse. This effect may also be related to the greatest number of stems in plants outdoors on 44 DAP (8.6 stems plant-1) compared to plants grown in greenhouse (5.8 stems plant-1). However, the average number of stems per plant was similar for all treatments of plants grown in greenhouses and outdoors (average 7.3 stems plant-1). Although the average height of the plants produced in the greenhouse was higher than that of plants outdoors, there was no significant difference between the average fresh weight (776.1 g plant-1) and dry weight of the plants in the greenhouse and fresh weight (597.0 g plant-1) and dry weight of the outdoors plants. Plants for fresh consumption also showed a higher mean plant height compared to plants for drying of the leaves, but the total fresh and dry weights were similar. The mean dry weight of stems was significantly higher in plants produced outdoors (20.5%) compared to plants grown in greenhouse (18.8%), but the average ascorbic acid content was similar (average 9.2 mg g-1 DM). For the type of crop, the mean leaves dry weight of the plants for fresh consumption (20.2%) was higher and the mean content of ascorbic acid was lower (8.5 mg g-1 DM), compared to the plants for drying (19.1% e 10.0 mg g-1 DM).
