Contributo para a implementação do referencial IFS Food numa empresa de transformação de produtos à base de carne

Abstract

A crescente preocupação das empresas com a qualidade e segurança alimentar dos seus produtos e as exigências de muitos retalhistas e grossistas europeus, reforçam a necessidade de implementação de referenciais específicos, como a Norma International Featured Standards (IFS). As vantagens deste referencial são o fato de incluir os princípios do Hazard Analysis and Critical Control Points (HACCP) e ser reconhecida a nível internacional. Devido a estas exigências, a Salsicharia Limiana, Lda. decidiu implementar um sistema de gestão de segurança alimentar aprovado pelo Global Food Safety Iniciative (GFSI), a International Featured Standards Food (IFS Food). É neste contexto que se enquadra o objetivo do presente trabalho: contribuição para a implementação do referencial IFS Food na empresa Salsicharia Limiana, Lda. O presente trabalho descreve os requisitos necessários para a implementação da IFS Food e toda a documentação necessária. Numa primeira fase do trabalho procedeu-se ao estudo do referencial IFS Food versão 6 de forma a compreender a metodologia para o cumprimento dos respetivos requisitos, e procedeu-se à realização de uma auditoria diagnóstico, que permitiu avaliar a situação atual da empresa. Numa segunda fase foi elaborada, revista e alterada, quando necessário, toda a documentação exigida pelo referencial e estabelecidos os planos de ações para dar cumprimento aos requisitos deste referencial. A empresa ainda não se encontra pronta para solicitar uma auditoria IFS, contudo espera que, durante o ano de 2018, os planos de ação estabelecidos sejam concluídos de forma a poder obter a certificação. Com a implementação e certificação segundo o referencial IFS Food, a empresa fica provida de um Sistema de Gestão da Qualidade e Segurança Alimentar, que facilita a sua integração em mercados internacionais, permitindo fazer face à grande competitividade dos mercados que se tem verificado nos últimos anos.

The growing concern of companies over quality and food safety of their products and the demands of many European retailers and wholesalers increase the need for implementation of specific international standards such as the International Featured Standards (IFS). The advantages of this standard are the fact that it includes HACCP principles and is internationally recognized. Due to these requirements, Salsicharia Limiana, Lda. has decided to implement a food safety management system approved by pelo Global Food Safety Iniciative (GFSI), the International Featured Standards Food (IFS Food). It in this context that fits the theme of this work: contribution to the implementation of the standard IFS Food in the company Salsicharia Limiana, Lda. The present work describes the requirements for the implementation of IFS Food and all necessary documentation. In a first phase of the work, the IFS Food version 6 was studied, in order to understand the methodology to fulfill the requirements and a diagnostic audit was carried out, which allowed to evaluate the current situation of the company. In a second phase, all the documentation required by the referential was elaborated, revised and altered, when necessary, and established action plans to comply with the requirements of this referential. The company isn´t yet ready to request an IFS audit, however, expects that during the year 2018 the established action plans will be finalized in order to obtain the certification. With the implementation and certification according to the standard IFS Food, the company is provided with a Quality and Food Safety Management System, which facilitates its integration in international markets, allowing to face the great competitiveness of the markets that has been evident in recent years.
