Title: Desenvolvimento e otimização de uma barra de cereais sem glúten, sem lactose e sem açúcar adicionado

Abstract: A preocupação com a alimentação tem se alterado ao longo das últimas décadas, uma vez que os consumidores apresentam um interesse cada vez maior por alimentos que assegurem o seu bem-estar e saúde. A pensar na procura por novos produtos e por produtos cada vez mais saudáveis foi desenvolvida uma barra de cereais sem glúten, sem lactose e sem açúcar adicionado. Este trabalho foi dividido em duas partes. Numa primeira parte do trabalho, selecionaram-se as matérias-primas a utilizar na formulação das barras, e estudou-se o efeito da temperatura e do tempo de secagem nas propriedades de textura, sensoriais, teor de humidade e atividade da água nas barras de cereais. Foram avaliadas três temperaturas de secagem diferentes 50 ⁰C, 60 ⁰C e 70 ⁰C durante 24 horas. Com estes resultados concluiu-se que o teor de humidade e a atividade da água diminuíam ao longo do tempo, sendo este efeito mais acentuado com o aumento da temperatura. Verificou-se ainda que a dureza da barra foi aumentando ao longo do tempo de secagem. Relativamente à análise sensorial, o painel considerou que a dureza e a crocância da barra aumentam com o aumento da temperatura, enquanto que a adesividade e a gomosidade diminuem com o aumento da temperatura. A segunda parte do trabalho consistiu na otimização da formulação através de um planeamento experimental, método de Taguchi, de arranjo ortogonal L9, de forma a avaliar o efeito de diferentes hidrocolóides, alfarroba, pectina e carboximetilcelulose, e de três temperaturas, 20 ºC, 60 ºC e 70 ºC, nas propriedades sensoriais, físico-químicas e de textura das barras de cereais. Verificou-se que os hidrocolóides não influenciaram o teor de proteína (7,1 ± 0,44%(p/p)), hidratos de carbono (40,4 ± 0,79%(p/p)), cinzas (1 ± 0,04%(p/p)), a atividade da água (0,58 ± 0,03) e o teor de humidade (7,14 ± 0,23%(p/p)). Concluiu-se que a temperatura de secagem diminuiu a atividade da água e do teor de humidade, tal como previsto, não causando qualquer alteração ao nível do teor de cinzas, de proteína e de hidratos de carbono. Sensorialmente o painel considerou que a temperatura de secagem de 20 °C não favorecia as caraterísticas sensoriais da barra e dessa forma seria necessário a introdução de um hidrocolóide para diminuir os valores de gomosidade e mastigabilidade, aumentando a dureza e a crocância da barra. A análise aos parâmetros dureza e fraturabilidade, permitiu verificar que com o aumento da temperatura de secagem também o valor destes aumentavam. A análise da estrutura interna das barras de cereais através de microscopia de varrimento eletrónico, permitiu concluir que a adição de um hidrocolóide promove uma estrutura mais uniforme e que a temperatura tem um efeito acentuado nas propriedades microestruturais das barras.
Concern about food has changed over the last decades, once consumers are showing an increasing interest for foods that ensure their well-being and health. Thinking about the consumer demand for new and healthier products, was developed a cereal bar free of gluten, lactose and added sugar. This work was divided in two parts. In the first part of the work there were selected the ingredients used in the process and studied the effect of drying temperature and time in texture, sensorial properties, moisture content and water activity in the cereal bars. There were evaluated three different drying temperatures, 50 ºC, 60 ºC and 70 ºC during 24 hours. With this results we conclude that the moisture content and water activity decrease over the time, with this decrease being more marked with the increase of the drying temperature. Regarding texture, the hardness of the bar was increasing over the drying time. In the sensorial analysis the panel considered that hardness and crunchiness increase with the increase of temperature, while adhesiveness and gumminess decrease with the increase of temperature. The second part of the study consist in the optimization of the formulation through an experimental design, a L9 orthogonal array, with Taguchi method, to evaluate the effect of different hydrocolloids locust bean gum, pectin and carboxymethil cellulose, and of three temperatures, 20 ºC, 60 ºC and 70 ºC, in the sensory, physicochemical and texture properties of the cereal bars. It was verified that the hydrocolloids used did not influence the protein (7,1 ± 0,44%(w/w)), the carbohydrates (40,4 ± 0,79%(w/w)) the ashes content (1 ± 0,04%(w/w)), the water activity (0,58 ± 0,03) or moisture (7,14 ± 0,79%(w/w)). It was concluded that the drying temperature decrease the water activity and moisture, as expected, not inducing any modification at the level of ash, protein and carbohydrates content. Sensory the panel has considered that the drying temperature of 20 °C did not favour the sensorial characteristics of the cereal bar and it will be necessary to had a hydrocolloid to decrease the values of gumminess and chewiness, increasing hardness and crunchiness. The analysis of the parameters hardness and fracturability, allow us to verify that with the increase of the drying temperature also the value of this increased. The internal structure of the cereal bars studied through scanning electron microscopy allowed to conclude that the addition of an hydrocolloid favors a more even structure and the temperature factor has great effect in the microstructural properties of the cereal bars.
