Abstract: | A indústria alimentar tem estudado alternativas à utilização de farinhas com glúten para
a produção de pão destinado aos doentes celíacos. Uma vez que o glúten desempenha
um papel fundamental na estrutura do pão, as tentativas na utilização de outras farinhas
resultam em produtos com pouca qualidade organolética. A substituição do glúten,
presente na farinha de trigo, e por conseguinte no pão, por outros componentes como
hidrocolóides e amidos de cereais, tem sido um desafio para a indústria.
Este trabalho teve como objetivo desenvolver um mix para pão sem glúten a ser
reconstituído pelo consumidor em casa, de acordo com um modo de preparação a
indicacar no rótulo. Numa primeira fase do trabalho selecionou-se a formulação base
(mix) a qual era constituída por: farinha de arroz, amido de milho, dextrose, goma de
alfarroba e goma de guar, e a preparação de reconstituição: água, gordura sólida,
levedura e sal. Fez-se um estudo de consumidor para averiguar qual a preferência
relativamente ao pão sem glúten branco (farinha de arroz) e pão escuro (farinha de
arroz e farinha de trigo sarraceno). Com este estudo concluiu-se que o consumidor
preferiu o pão branco. De forma a otimizar o mix de pão branco estudou-se o efeito do
tipo de amido de arroz e da respetiva concentração nas propriedades de textura,
viscosidade, cor e pH da massa e do pão após cozedura.
Estudaram-se quatros tipo de amidos de arroz diferentes: amido de arroz ceroso, nativo
e de granulometria normal (RemyLine AXDR); amido de arroz ceroso, pré-gelatinizado e
de granulometria fina (RemyLine AXFG-P); amido de arroz ceroso modificado
quimicamente (RemyGel 663); amido de arroz regular, nativo e com granulometria
grossa (Remy B).
Com os resultados obtidos concluiu-se que concentrações de amido superiores a 10%
resultam em produtos com características organoléticas indesejáveis. Concluiu-se
também que o amido RemyLine AXFG-P, independentemente da concentração, conferiu
características de textura e cor mais semelhantes às do pão tradicional com glúten. Pelo
contrario, e de uma forma geral os restantes amidos conferiram ao miolo e à crosta do
pão maior dureza, sendo este efeito mais pronunciado no caso do amido RemyLine
AXDR. Como conclusão final sugere-se uma formulação de mix com 5% de RemyLine
AXFG-P. The food industry has been studying alternatives to gluten-based flour in the production of bread for celiacs. Since the gluten plays a key-role in the bread structure, the use of other flours results in produts with low organoleptic quality. The replacement of gluten with other components such as hydrocolloids and cereals starches has been a challenge for the industry. This study aimed to develop a mix for gluten-free bread, prepared by the consumer at home according to indicated method of preparation. In the first stage of the work it was selected the base-formulation (mix) which consisted of: rice flour, corn starch, dextrose, locust bean gum and guar gum; and the preparation of reconstitution: water, solid fat, yeast and salt. It was developed a consumer study to ascertain the preference of consumers between a bread without gluten white (rice flour) and dark bread (rice flour and buckwheat flour). It was concluded that consumers preferred the white bread. In order to optimize the white bread mix, it was studied the effect of the type of rice starch and respective concentration in texture properties, viscosity, color and pH of the dough and bread after baking. There were studied four different rice starches: rice waxy starch, native and normal powder (RemyLine AXDR); waxy rice starch, pregelatinized and fine grain (RemyLine AXFG-P); waxy rice starch, chemically modified (RemyGel 663); regular rice starch, native and coarse (Remy B). From the results obtained it was concluded that starch concentrations above 10% results in products with undesirable organoleptic properties. It was also concluded that RemyLine AXFG-P, regardless of its concentration, has given more similar characteristics to the traditional bread with gluten, like texture and color, altough the remaining starches gave higher hardness to the crumb and crust of the bread, and this effect was more marked with the use of RemyLine AXDR. It is suggested that a final mix formulation with 5% of RemyLine AXFG-P. |
